I am asked at least once a week for my meatloaf recipe which was a staple in my house growing up. My mom made this recipe for my family *all* the time and I think it’s so special I can now make it for my family. She originally received the recipe from her roommate in med school and has been making it for over 40 years! Henning loves it {and when I say love, I mean love} and could finish the whole loaf in only a few sittings. The recipe could not be more simple and without fail turns out great every time. FOR THE MEATLOAF:
1 1/2 lbs. ground meat
1 cup breadcrumbs (about 3 slices of regular bread cut into small cubes)
1 small onion chopped fine
1 egg
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 8 oz. can tomato sauce
Mix together with a fork and pat into a loaf shape, place in a 13 x 9 baking dish. {Pro tip: poke a few holes in the meatloaf to allow the sauce to seep down into it.}
FOR THE SAUCE:
1/2 8 oz. can tomato sauce
3 tablespoons white vinegar
3 tablespoons brown sugar
2 tablespoons regular yellow mustard
2 tablespoons worcestershire sauce
Pour the sauce over the meatloaf and bake at 350 degrees for an hour and 15 minutes, keeping an eye on it. Enjoy!
